Gnocchi with spinach, cherry tomatoes and goat cheese

Gnocchi is a wonderful staple for the pantry.  It doesn't need refrigeration and can be dressed up a variety of ways.  If the electric goes out, and you have a gas stove or camp stove, this is an easy meal.  I mention that because in Florida we have hurricane supplies on hand in case you need to hunker down. 👇 This is a stove top meal.


This plated up nicely but take my word for it - Do Not replace goat cheese with Boursin cheese.  This turned out so incredibly rich we couldn't eat the leftovers.  I ought to have followed the recipe and not substituted! Here is a recipe for the meal but I found the recipe I used in a magazine.  Now I can't find the magzine so, can't tell you the publication.  This recipe appears to be the same and again...use the goat cheese.


Besides the gnocchi you have nice fresh ingredients such as cherry tomatoes, fresh baby spinach, garlic and onions. Let me know if you try this and have better luck with the goat cheese :-)  This is a vegetarian dish if you use vegetable broth instead of chicken broth.

  3. I love gnocchi. I've tried the shop bought, but I really like making it as well as eating it. I love the part where they swim up to the top of the simmering water, telling you they're ready. I've made potato ones but I like a cheese filling better. In a hurricane I doubt if I'd be picky though.

  4. Delicious-sounding combination! My main source for gnocchi was Trader Joe’s but they don’t always have it. I love that it’s shelf-stable, though I think it would be hard to prepare in a real power outage.

    1. Mae, in power outages we use a camp stove so I can make use of anything for a skillet or pot. Pasta, rice, gnocchi and things like that.

  7. Mmmm goat cheese!!! My favorite!!! Could I substitute pasta for the gnocci? I hate the texture of gnocci when I'm chewing it. lol

  11. This looks amazing! I'm a big fan of gnocchi but had never really thought of it as a good pantry staple. You're so right! It's really unfortunate that the boursin cheese didn't work. This would be a perfect dinner for me when Jason's traveling but I'm allergic to goat milk. I'll need to do some research for a substitute.

    1. Katherine, I had to drink goat milk when I was a baby as I was allegeric to cow milk! There is bound to be a substitution which has the proper consistancy yet isn't too rich. I'd like to make it again but not sure what to use for the creaminess.
