Chicken Marsala for Magazine Monday



The Wandering Coyote over at ReTorte hosts Magazine Monday - I prepared something from an old Family Circle magazine that had been hanging about in my "To Try" folder.



1 1/2 lb. chicken cutlets
3 TB olive oil
1/2 c. chicken broth
1/2 c. Marsala wine
a few sprinkles of white wine (about 2 teaspoons)
Salt and pepper
1 tbsp. flour
3 tbsp. butter
10 or more ounces of sliced mushrooms
1 sm. onion, diced

Heat olive oil and one tablespoon butter in large pan. Saute cutlets in butter until they start to brown. Remove from skillet and set aside.



Now take mushrooms and onions........




And slice and chop.......



Add more butter to the pan if needed and brown onion, then add mushrooms, salt and pepper. Saute for 1-2 minutes until mushrooms are cooked.




Gradually sift flour into pan, stirring constantly. Add chicken broth and Marsala. Stir until slightly thick and add a tad more flour if needed.

Return chicken to the pan of oooey delicious mushroom Marsla goodnees.



Simmer for 5 minutes.

Served with a Chardonnay, because I cooked with it, this was a crisp taste that melded with the sweetness of the Marsala sauce.



Would I use this recipe again. Oh...absolutely. As a matter of fact, the sauce was so good that I prepared more sauce to add to the leftovers. And...as a bonus...because after two dinner meals there was one cutlet left with sauce, I made soup! That was fab soup for a Friday lunch.

  7. I use Taylor wine too, i think its the best, I'll have to try adding white wine though, great idea!
